    We call this “orange soup.” I originally posted a variation of this recipe on my blog as a carrot soup, but as time passed I altered it, first into a smoky sweet potato soup, and now here as a (still smoky) butternut squash soup. Our recipes change depending on the season and what we have in abundance, but any of the wonderful vegetables I’ve just mentioned work beautifully in this soup. You’ll find that butternut squash creates a lighter dish, whereas sweet potatoes or carrots lend a bit more heartiness. Choose your favorite, or use whatever’s in your fridge!

    Ingredients

    • 11/2 tablespoons olive oil
    • 1 medium onion, diced
    • 2 carrots, diced
    • 1 celery stalk, diced
    • Pinch of chili flakes (optional)
    • 1 small butternut squash, peeled, de-seeded, and cubed
    • 1/4 teaspoon cumin
    • 3/4 teaspoon sweet smoked Spanish paprika
    • 2 teaspoons salt
    • Vegetable Stock (page 116) or water
    • 1/4 teaspoon liquid smoke
    • 11/2 packed cups roughly chopped kale
    • Juice of 1/2 lemon (about 1 tablespoon)
    • Freshly cracked black pepper to taste
